HAPPY EASTER!

I was a little worried that our Easter wouldn’t be quite the same this year without a kitchen...because really, what would Easter be without ham and funeral potatoes? I guess we didn’t need to worry though because Grandma Mosher invited us to Easter dinner, and so the only thing I had to make was some potato salad. We still didn’t get the funeral potatoes, but at least we got the ham!

Our kitchen was supposed to be done on Friday afternoon and the appliances were supposed to be installed sometime on Saturday…which should have given me plenty of time to cook some potatoes for my potato salad, but things never work out quite the way you plan...or at least that’s what we’ve learned throughout this entire remodeling process! However, even with that knowledge, I still found myself getting disappointed more than I should have!

I had been promised that I would have a working kitchen on Friday afternoon and I was so excited to be able to have a sink with running water. I should have never gotten my hopes up though because as it turned out, because they started installing the cabinets a day late (Tuesday instead of Monday) they weren’t quite done with them until late Saturday morning, and because the cabinets were still being installed Friday afternoon, the countertops couldn’t be installed until late that day, which in turn meant that the plumber was unable to hook up the water until Saturday because the sink wasn’t installed until after 6:00 on Friday night! As if that wasn’t disappointment enough, the appliances, which were supposed to be delivered at 2:00 on Saturday afternoon, were really delivered at 7:00 that night, which meant that even when they did get delivered, Rod still had to hook up the stove...and the plumber was going to have to come back on Monday to finish installing the dishwasher! At least I was getting closer to having a finished kitchen!

Probably the biggest disappointment in not having a working kitchen until late Saturday night was the fact that we were unable to color Easter eggs...and Connor continued to remind me of that fact even weeks after Easter was over! We still got to do the “string thing” and Easter egg hunt like we always do and I thought for sure that would be enough to appease the boys...and it worked for a while, but for some reason, in their eyes, Easter just isn’t Easter without coloring eggs (to heck with the funeral potatoes and ham!) Somehow in a moment of weakness they got me to agree that I might let them color Easter eggs even after the fact but as of yet, I haven’t given in and I don’t plan on it. After all, what do you do with a dozen colored Easter eggs when no one likes hard boiled eggs? If I’m lucky, they will forget all about it!

The last thing we have left to do in the kitchen is the tile backsplash...and I can’t wait to have it all done! In the meantime, the boys are out for Spring Break this week, so hopefully we can find something fun to do...besides watching the tile guys put up the tile!
